Banana & Blueberry Muffins for Strawberry Sundays


After buying some new kitchen bits and pieces yesterday I got all homely like and spent some time cooking this arvo. I made up a new recipe (seeings though some of the 'normal' muffin ingredients I didnt have, and the shops seem such a far way away after a big weekend of dancing and laughing!)...here tis:


Hannah's Banana & Blueberry Muffins

2 cups Spelt Flour

2 tbsp Chia seeds

2 tbsp LSA mix

1 tbsp olive oil

1 tbsp butter

2 tsp vanilla essence

2 tbsp raw sugare or xylitol

2 eggs

1 cup of soy milk (or dairy if you like)

2 tsp baking soda

1 big fat banana (chop it up so its abit mushy)

1 cup of blueberries (fresh or frozen)


Mix all the dry stuff together in one bowl, and mix all the wet stuff in another bowl. Then mix them together, pop in the oven for 25mins on 190 deg....make a cup of tea, make the table look pretty, and find some old editions of frankie that you havent quite read cover to back yet.... and then you have perfected the recipe for a delicious strawberry sunday!
